Collaboration with a master barista

Every Cabral Cafe coffee is created and tested in collaboration with Michał Knap-Dam , Polish Barista Vice-Champion. His experience allows him to maintain complete control over the flavor—from the first roast to the finished product.

The collaboration includes raw material evaluation, roast profile testing, and verification of the coffee under real-world brewing conditions. This ensures that flavor is not a statement, but the result of a process.

Burning profile instead of experimenting

Each coffee is assigned a fixed roast profile. Parameters are controlled and repeatable, and the roasting method is tailored to the specific application: espresso, milk coffees, or pour-over methods.

We don't change the profile from firing to firing. This ensures that customers receive a product with a consistent character, regardless of batch.

Tests in real conditions

Cabral Cafe coffees are tested in the conditions in which they will be used by customers—in automatic, piston, and pour-over coffee machines. We evaluate extraction, flavor balance, and stability in daily brewing.

Only coffee that meets these criteria is released for sale.

Repeatability as standard

At Cabral Cafe, mastery of flavor means consistency. Proper raw materials, a controlled roasting process, and testing by an experienced barista ensure product consistency over time.
